Beat Your Meat

When times are tough, so are your steaks. Nightly USDA Prime cuts would be a dream, but also a weight on the pocketbook. So, you’ve gotta go Choice or something totally unlabeled and, worse, thin. Whether your grill is a snazzy Wolf outdoor kitchen or a top-of-the-line Weber, no amount of grilling perfection will upgrade your meat. But a simple little pre-cooking step called “tenderizing” will. Smashing the meat breaks down the fibers that otherwise tense up once cooked (thus making meat tough and chewy). But breaking them down makes it impossible for said fibers to gang up on your ability to chew.

So for tenderizing, we dig this new tool from some hip designers overseas. It’s called the Double Trouble and it allows you to both pound AND roll with one single utensil. Usually, you can use a mallet or a roller, but never both from the same device. Now you can, with the Double Trouble. The only problem we see here is the potential for fatal human-killing organisms to latch on to your hands as you roll, getting up in between your knuckles, and making you so sick that you wish you were actually dead.

So on second thought, maybe you better just splurge on the good USDA Prime. Safety first!

But if you must tenderize, pick up Double Trouble for about $15 here: http://www.yankodesign.com/2011/06/30/double-trouble
