How long can a pie stay Humble? That’s the question. I suppose only time will tell as Tom Kaufman opens his second location (the first is at Hilton Village) of his pizza concept, Humble Pie located at Desert Ridge.
For those new to HP, they serve artisan pizzas, great salad, some sandwiches and desserts. When we first visited HP, we were a bit put off when we asked for an ingredient exchange on a pizza and were scolded by our server, “the chef will not alter the pizzas as they have been created to allow for a certain combination of ingredients due to the heat and cooking time in the oven.” Geez, all we wanted to do was switch some prosciutto for pancetta! Humble indeed!
Obviously they have improved on their service and the people of the Desert Ridge area are happy to have them. Humble Pie in the Desert Ridge area will offer the same casual setting, including a patio and an exhibition food counter so you can keep an eye on your pizza.
Kaufman also prides himself on a great wine program here and on Mondays, select bottles of wine are half-off.
